Ingredients
200g Plain Flour
150g of caster sugar ( or 1/2 caster 1/2 soft brown sugar, this is my preference)
1 1/2 teaspoons of baking powder
Pinch of Salt
90ml of Glenisk Natural Yoghurt ( or any other natural yoghurt, not Greek style though)
80ml of Sunflower Oil
1 large egg ( duck eggs are great) beaten
2 teaspoons (level) of cinnamon
1 teaspoon of vanilla extract
2 or 3 apples peeled, cored and chopped.
Icing Sugar
Method
Preheat oven to 200 degrees
Line a muffin tin with muffin papers ( you will need at least 8 but number depends on the size)
Mix the flour, sugars, baking powder, salt and cinnamon in a large bowl.
In a jug lightly mix the yoghurt, oil, egg and vanilla extract
Add the wet ingredients to the dry and stir lightly to combine, it will appear lumpy but that fine, just don't over mix.
Fold in the apples.
Spoon the mixture into the muffin papers, an ice cream scoop is a good measure for each one, sprinkle the top with icing sugar.
Bake in the oven for about 20 mins...these are delicious warm or cold and as an extra treat serve with some custard.
